Beef Bourguignon

This is the recipe that you were all waiting for! The famous Bourguignon Beef!

The Bourguignon beef recipe comes from Burgundy area in France. It was originally a specialty eaten by the winemakers & farmers during celebration days!

This Bourguignon beef recipe takes some time to prepare, but you can separate the steps and I assure you it will not seems that long! Let’s go!


For 6 people
  • 1,5 kilos of beef (choose slow-cooking cuts)
  • Cured pork, bacon or pancetta (200 gr)
  • 2 onions
  • 2 carrots
  • Butter (100 gr)
  • Flour (60 gr)
  • Meat - veal, beef- stock (2 big glasses)
  • Good red Burgundy wine (2 big glasses)
  • Aromatics (bay, thyme and parsley)
  • Pepper, Salt


Marinate the beef

  • 1. Cut the beef in chunks of about 1,5 inches (width & height)
  • 2. Put them in a pot and cover them with the wine, the slides carrots & some aromatics
  • 3. Cover & let marinating for about 12 hours in the fridge

Prepare the Bourguignon beef

  • 1. Melt the butter in a big pan (or pot dedicated for stew beef), add the sliced onions and the pork cut in small pieces
  • 2. When it's cooked, put it in a bowl
  • 3. Take the marinated beef off the pot (keep the wine apart) and cook it in the same pan where you cooked the onions & pork
  • 4. Add the flour & mix
  • 5. Add the 2 glasses of meat stock & mix
  • 6. Then add the wine sauce (with carrots & aromatics), the cooked onion & pork and slow-cook it for at least 3 hours
  • 6. Don't hesitate to add some water if you see that the Bourguignon sauce is too dense (it has to be creamy but not too liquid)
  • 7. Take a picture, send it on @hasta_paris instagram and eat!
