Butter shortbreads of the famous pastry chef : Gaston Lenôtre!


In France, we have plenty of Pastry chefs which all have their own specialty! For example, Pierre Hermé is famous for the macarons, Cédric Grolet for its incredible sculpted fruits and Dominique Ansel for having invented the Cronut. Today, I will share with you one of the most typical French Pastries. I will share with you the recipe of the butter shortbreads of pastry chef Gaston Lenôtre! 

This recipe is so easy to cook that you can let your children help! These butter shortbreads are what I used to eat when I was a child at my grandmother house when I was a child! They are perfect for tea time!

Also, fun thing with this recipe, you can give the shape you want to your cookies!


For about 50 cookies
  • Flour (250 gr)
  • Softed Butter (175 gr) not melted
  • Icing sugar (65 gr)
  • 1 egg
  • Almond powder (65 gr)
  • 1 pinch of salt


Prepare the dough

  • 1. Mix together the flour, almond powder, sugar and salt
  • 2. Add the softed butter and work everything with your hand to give a coarse sand
  • 3. Add the egg and knead to get a dough
  • 4. Let the dough rest for 1 hour in the fridge

Shape the butter shortbreads

Et voilà!
